Hours of Operation: Every Saturday, including July 4, from 9-11 a.m.

COVID-19 Guidelines: Only one person/couple/family in at a time; masks must be worn; and access time will be limited to 15 minutes.

Family Housing Council

Executive Board Elections

Family Housing Council is looking for enthusiastic, community-focused residents to join the executive board as either president or vice president for the 2020-2021 academic year.

The Council works to support residents through monthly community meetings and educational gatherings, funding for reservable equipment, and seasonal programming. Each elected official receives a rent credit based on the position they hold.

As you consider an outdoors adventure, be prepared:

  • Schedule plans for early morning or late afternoons.
  • Apply sunscreen and avoid direct sunlight, especially at noon.
  • Drink lots of fluids, especially water.
  • Take frequent breaks in the shade.
  • If you or someone you know feels dizzy or lightheaded, immediately sit down and drink water. In serious situations, call 911.

Recipe of the Month

The avocado is an incredibly nutritious superfood, known for its high nutrient content and amazing properties. It contains 20 different vitamins and minerals, including Vitamin K, Folate, Vitamin C, and Vitamin E. It also contains more potassium than a banana, which helps regulate blood pressure.

Here’s an exciting way to eat avocados that both adults and children will love!

What you need:

  • 2 ripe avocados, halved and pitted
  • 4 large eggs
  • Salt
  • Freshly ground black pepper
  • Freshly chopped chives, for garnish

What you do:

  1. Preheat oven to 350°. Scoop about 1 tablespoon worth of avocado out of each half and put aside. Place hollowed avocados in a baking dish.
  2. Crack eggs into a bowl. Using a spoon, transfer one yolk to each avocado half, then spoon in as much egg white as you can fit without spilling over.
  3. Season with salt and pepper and bake 20 to 25 minutes until whites are set, and yolks are no longer runny. (Cover with foil if avocados are beginning to brown)
  4. Top avocados with chives before serving.
